Volunteer shares recipe for white chili
Volunteer Judy Sellon came to volunteer this weekend with Covenant Life Church in Michigan. But painting isn't the only thing she can do: she also makes a mean bowl of chili. She shared her recipe with our soul food kitchen. "I make this in the wintertime with bread and a tossed salad," says Judy, "and then eat it in front of the fireplace with my honey." White Chili

1 48 oz. jar great northern beans
1 16 oz. jar of chunky salsa
1 10-oz. block jalapeno jack cheese, cubed or shredded
1 8-oz. block cream cheese, cubed
4 boneless, skinless chicken breasts
1 Tbls. minced fresh garlic
2 Tbls. dried minced onion
1/4 tsp. thyme
1/4 tsp. tarragon

Simmer chicken breasts in water until done. Cool and cut into chunks. Add rest of ingredients and simmer over medium heat, stirring often. Thin down with chicken broth if too thick.

As an African American, how can I make this world a better place, using my God-given talent?

Excerpts from essays submitted by children of all grades at Circle-Rock Prep School. Every week during black history month, selected children read their essays over the intercom at school.

I would make sure that every neighborhood is clean. Every Saturday would be clean up day. So if your neighborhood is not clean, you would have to pay a $200 fine. Darius Robertson, first grade

As an African-American my singing and praying makes God happy. My praying helps people come together. And my singing makes smiles on people's faces. Taelar Chatman, 1st grade

I can make this world a better place to live by keeping my faith in God. I can continue to go to Sunday school to learn about the teachings of God and use them during the week. Most of all, I would set a good example for the younger children to follow. Walter Braden II, 3rd grade

I will stop people from hurting each other and saying bad things. I will encourage them to be friends and not fight. Dominic Abiagom, 3rd grade

I can make the world a better place by spreading the word of Jesus, by not throwing trash on the ground, and by helping others not a fortunate as my family and I. Fasshanta Brown, 3rd grade

I would make pretty pictures and sell them to make enough money to give food to the poor. Anna Harris, 3rd grade

A talent I have is to help people with their education. With this talent I can teach people how to read and write God's words. If everyone would love each other, there would not be poverty, for we would not let each other live poorly. Jennifer Roberts, 6th grade

One thing I would do is to get friends of mine and help build a park so that little kids can go out and play instead of staying in. I like to see little kids' faces light up. Quincy Stamley, 6th grade

As an African-American I can make this world a better place. I can help my country by telling people about God and that Jesus is the only way to heaven. Timothy Sowell, 6th grade
